In Japan, Okayu is commonly known as the food for the ill but it is also used to ease the transition from liquid food to solid food for Japanese infants.

Ingredients you will need (4 servings):
  • 250 gram (1 Cup) Short grain rice
  • 1,5 liter (6.2 Cups) of Water
  • Some salt

Optionally:
  • carrots
  • sesame seeds
  • green onions
  • soy sauce
  • umeboshi (sour and salty taste)

Instructions :
1) Wash your rice and drain it.
2) Now put it into a pot together with the water. Keep in mind that if you want your porridge to be softer you can do this by adding more water.
Water rules:
6 times the quantity of rice (6:1) = Normal porridge
8 times the quantity of rice (8:1) = Soft porridge
10 times the quantity of rice (10:1) = Softer porridge
3) Heat your pot at high heat (add your carrots here so they get soft). Once the water boils with the rice, reduce it to low heat and leave at low heat for about 30 to 40 minutes.
4) After 30 to 40 minutes, you can add your optional ingredients such as sesame seeds, chopped green onions, chopped umeboshi and some salt or soy sauce.
Be careful with the salt and the soy sauce since both are salty and you don’t want to get a stomachache.
As a side dish, you can make a simple miso soup, clear onion soup, fried salmon, stocked chicken or Tamagoyaki (Japanese rolled egg). If you or your patient is sick restrain from using egg and stocked chicken. Preferably, prepare some miso soup or clear onion soup. Enjoy ^^
